Product Description Erythritol, a ployol (sugar alcohol), is a good-tasting sweetener which is suitable for a variety of reduced-calorie and sugar-free foods. It can be used as a sugar substitute in most sugar-free recipes. Erythritol has been part of the human diet for thousands of years due to its presence in foods such as pears, melons, grapes and mushrooms. NOW Erythritol is 100% pure and derived from a corn source. Erythritol resembles sugar in consistency and taste but has a caloric value near zero. It is also a great sugar alternative for diabetics. "Erythritol" has become our sugar substitute of choice since I became diabetic a few months ago. In crystal form, it seems about 70% as sweet as regular sugar. My wife uses a little bit of added sugar to bring the sweetness up for the rest of the family in things that need it, but I am happy with it as a one-to-one replacement for sugar in most things. I have not noticed any glycemic impact to my blood sugar or "laxative" effects seen with other sugar alcohol sweeteners (which is a very important consideration :-) Highly recommended!

There's not too much sweetness, but it's definately not as bitter as some other sweeteners like stevia. In a brownie recipe, I subbed 1/2 the sugar with the Erythritol, but I feel like I still could've used 2/3 sugar and 1/3 erythritol. I plan to keep it in my pantry as an option.

This stuff is amazing-it not only tastes exactly like sugar it looks like sugar. This is the only substitute sugar my husband has not detected. We have had it in our sugar bowl for five months and he still thinks it is sugar!
